Your wedding cake will be the centerpiece of your wedding reception. If you’re planning a fairytale affair, then you’ll want to complete your wedding with an enchanting wedding cake. It can, however, be incredibly overwhelming to choose your dream cake with all of the options out there—from multi-tiered masterpieces; buttercream or fondant; flowers or no flowers? To help inspire you we asked three of Wilmington’s top bakers to share some of their favorite creations.


Aquarium Dream
Imaginary Cakes – Cindy Laverdiere

“This is probably my fave cake of all time, and I love it for several reasons,” says Cindy. “It is a very non-traditional cake, first of all. Nothing like you would normally see at any wedding. The couple, Corinne and Jamey, wanted a cake to fit an aquarium theme and totally trusted my artistic abilities to bring their vision to life. Every little critter you see on this cake was made with my bare hands from sugar. Everything is edible except the topper. They provided the topper for me to place. It is actually a 3D-printed portrait of them. How awesome is that? It’s the only one I’ve ever seen, and they got it from a company called This cake was one of, if not THE most fun cake I’ve ever had the pleasure of making. It is the sole reason I reside in Wilmington, NC. I moved here many moons ago to attend UNCW with intentions of attaining a BA in Marine Biology. After my first year and realizing (actually, being loudly and boldly told by my Oceanography professor) that there aren’t enough jobs in the field with slimmer chances of even working with sea animals, I changed my major to art. So I settled for a NAUI dive certification instead. This cake allowed me to combine my love of the ocean and my passion for art.”

One Belle Bakery – Anna Echols

“I was so looking forward to making this cake as soon as the sweet couple booked it,” says Anna. The bride requested an “extremely tall cake,” and that is exactly what we created. It took several days to complete from start to finish. I had to build a base structure that would support the weight of the cake, that was 7 tiers tall and weighed over 100 lbs.  It took two people to transport…very slowly! The couple offered their guests a variety of flavors including carrot cake with a cream cheese filling, a chocolate cake with dark fudge filling, a lemon cake with a lemon custard, and our signature flavor, amaretto cake with amaretto custard filling. The entire cake was covered in buttercream with white fondant accents.”

Rustic Elegance

“This stunning cake is definitely a hot trend right now and has been for about 2-3 years,” says Cindy. “The cake technique is what I call “semi-naked” where there is not much icing covering the cake and the natural cake shows through underneath. These cakes are gorgeous, especially in venues that have exposed brick (like historical downtown buildings). It is considered rustic, but add in a gold topper, gold cake stand, gold serving set, candles, and fresh flowers, and you have rustic elegance. And those anemones!! Wow…real, natural flowers just enhance the cake 100 percent.”

“I loved the challenge that this cake afforded me,” says Tammy. “From the hexagon bottom tier to the modern hand painted buttercream top tiers, this one is a beautiful marriage of ultra modern touches and stunning, elegant gardens.”

“One of my favorites to date is this beautiful mixed-media wedding cake,” says Tammy. “ I loved that I was able to incorporate buttercream texture on the top 2 tiers, as well as a soft, ruffled, rose created in fondant for the bottom tier.”

Lavish Lace
Apple Annies Bake Shop – Hans Westermark

“The design on this is cake was inspired by the lace from the bride’s gown,” said Apple Annies’ Marketing Director Krissy Mingia. “In fact, a photo of the dress was brought in to the bakery and our head decorator Hans Westermark used it to create the beautiful hand piped design on the cake. Fresh flowers from the bridal bouquet were also used to decorate the cake.”
